This Spanish-style cauliflower rice is a low-carb alternative to traditional rice dishes, infused with classic Spanish flavors. It’s versatile and can be paired with various proteins such as grilled chicken, shrimp, or chorizo for a complete meal. For a vegetarian option, try adding roasted bell peppers, zucchini, or chickpeas. The veggie mix also works well as a base for a grain-free paella or as a side dish for fish or meat entrees.

Ingredients:

– 1 bag (16 oz) frozen cauliflower rice

– 1 tbsp olive oil

– 1/2 onion, finely diced

– 2 cloves garlic, minced

– 2 tbsp tomato paste

– 1/2 cup chicken broth

– 1 tsp paprika

– Salt and pepper to taste

Instructions:

1. Heat olive oil in a large skillet over medium heat.

2. Add diced onion and sauté for 3-4 minutes until translucent.

3. Add minced garlic and cook for another minute.

4. Stir in tomato paste and cook for 1-2 minutes until it darkens slightly.

5. Add frozen cauliflower rice and stir to combine.

6. Pour in chicken broth and add paprika, salt, and pepper.

7. Cook for 7-10 minutes, stirring occasionally, until cauliflower is tender and liquid is absorbed.

8. Taste and adjust seasoning as needed.

9. Note: if you like you cauliflower rice more tender, cook for longer and use more chicken broth until it is to a texture that you like.
