Ingredients

Turkey Meatballs:

  • 1 lb ground turkey (93% lean)
  • 1/4 cup almond flour
  • 1 large egg
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil

Marinara Sauce:

  • 1 can (28 oz) crushed tomatoes
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp tomato paste
  • 1 bay leaf

Instructions:

1. In a large bowl, mix ground turkey, almond flour, egg, Parmesan, garlic, oregano, basil, salt, and pepper until well combined.

2. Form the mixture into 16 meatballs, about 1.5 inches in diameter.

3. Heat olive oil in a large skillet over medium heat. Add meatballs and cook for 8-10 minutes, turning occasionally, until browned on all sides and cooked through.

4. For the sauce, heat olive oil in a saucepan over medium heat. Add onion and garlic, sauté until softened, about 5 minutes.

5. Add crushed tomatoes, herbs, salt, pepper, tomato paste, and bay leaf. Simmer for 20 minutes, stirring occasionally.

6. Remove bay leaf, add turkey meatballs to the sauce, and simmer for an additional 10 minutes.

An even better food choice would be to leave the cruelty out of the recipe, not to mention the fact that turkey is anything but healthy if you have the stomach to look at how these birds are “processed.” I love the Ageist and read every issue. For such a forward-thinking publication, promoting the consumption of animals leaves me cold. It is unsustainable, unhealthy and unspeakably cruel.
