Quick and Easy Raw Coconut Protein Balls Recipe

This keto coconut protein ball recipe is so fast and easy to make, and they don’t even need to bake! Not to mention, they’re the healthiest coconut dessert you can enjoy anytime you are craving something sweet.

These are great for a last-minute kids’ party or pot luck. I know this because it took me 10 minutes to make them when I had to send my kid to school with a dish to share with his schoolmates. The rewarding part? All the kids asking for more (and knowing that it is nutrient dense with no yucky fillers).

Mix all ingredients for the balls: Almond meal, almond butter, cinnamon, and stevia.

Gather a spoonful and roll into small balls.

Submerge balls into coconut, cacao butter mixture for extra deliciousness!!

Let the balls cool off in the refrigerator! They are ready to devour!! Yum!!

Ingredients

Coconut Shell:

  • 1 cup melted cacao butter
  • 2 tablespoons cashew butter
  • 2 tablespoons coconut milk powder
  • Sweetener (I use zero-calorie stevia or monk fruit)

Almond Balls:

  • 1 cup tiger nut flour or almond meal **
  • 1 cup almond butter
  • Pinch of cinnamon
  • Sweetener (I use zero-calorie stevia or monk fruit)

Directions

  1. In a medium bowl, mix together almond butter, tiger flour or almond meal, cinnamon, and sweetener. Combine until the mixture becomes moldable. You may add more flour to make it more solid, or add more sweetener for extra sweetness.
  2. Roll the mixture into little balls, about 1 tablespoon in diameter. Once all of your mixture has been rolled, place in freezer for about 10 minutes so the balls solidify.
  3. In a separate bowl, mix melted cacao butter, cashew butter, coconut meat powder, and sweetener. If it’s too runny, place in the freezer for about 3 minutes until it becomes a thicker consistency, like batter.
  4. Dip each ball into the mixture and place on a flat surface with wax paper. You need the paper so the balls don’t stick to the surface.
  5. Before the coconut mixture solidifies, you can also add shredded coconut or other toppings like crushed Barukas to add an extra layer of fun!

**I like using tiger nut flour because it is a nutritionally-dense root that adds natural sweetness and extra fiber to your Keto Balls. You may use almond meal if you prefer.
