Chocolate-Covered Peanut Butter-Filled Dates AKA Healthy Snickers

Combining chocolate, peanut butter and dates, this dessert is simple, delicious, and full of nutrients including fiber, antioxidants and more.

If you have a sweet tooth or you’re considering participating in an Ironman, this recipe is for you. These chocolate-covered peanut butter-filled dates (AKA healthy Snickers) will change your dessert game.

Dates are chewy, sweet fruit that contain a range of nutrients. Dates are high in fiber, potassium, magnesium, antioxidants, copper, B6, and more. They are also high in calories and sugar, similar to dried fruit. Because they are so sweet, one date is usually enough to satisfy a sweet craving and combining the dates with a savory nut butter, like peanut butter, creates a rich and filling dessert or snack. These have been tested on kids and picky eaters and are always a hit. 

They also make a great pre-workout snack to fuel your body. David Richman, an Ironman athlete, says that he takes dates for long bike rides and his “favorite thing at about mile 90 of a 112-mile Ironman ride is a Snickers bar.” Here is our health-ified version of that! 

Ingredients

  • 10 medjool dates, pit removed 
  • ½ cup nut butter of choice 
  • 6-8 oz chocolate of choice; we used semi-sweet chocolate 
  • Maldon sea salt 

Method

  • Remove the pits from your dates and fill with about ½ – 1 tablespoon of nut butter. Place in the fridge or freezer to solidify. 
  • While the dates are solidifying, melt your chocolate in either the microwave or in a double boiler on the stove. If using the microwave, do it in 15-30 second intervals stirring in between.
  • Once chocolate is melted, dip the dates in and turn over to completely cover. Place each chocolate date on a parchment paper-lined plate and sprinkle with Maldon sea salt while the chocolate is still melted.
  • When all the dates are covered in chocolate, place in the fridge again to solidify the chocolate. 
  • Serve and enjoy!
