Recipe for Match Energy Bites

Yields: Approximately 12–14 matcha energy bites

Nutritional Information

Per bite, approximately:

  • Calories: 90–100 calories
  • Protein: 3–4 grams
  • Carbohydrates: 6–7 grams
  • Healthy Fats: 7–8 grams
  • Fiber: 2–3 grams

Ingredients

  • 1 cup almond flour
  • 1/3 cup peanut butter
  • 1/4 cup maple syrup
  • 2–3 tbsp. matcha green tea powder (plus extra for coating, optional)

For Coating

  • 1/4 cup crushed pistachios
  • 1/4 cup crushed sunflower seeds

Instructions

  1. In a medium mixing bowl, combine almond flour, peanut butter, maple syrup, and 2–3 tablespoons of matcha powder
  2. Mix thoroughly until the ingredients form a cohesive, slightly sticky dough. If the mixture is too dry, add a little more maple syrup; if too wet, add a bit more almond flour.
  3. Cover and refrigerate the mixture for 15–20 minutes to make it easier to handle
  4. In a separate, shallow dish, mix crushed pistachios, sunflower seeds, and additional matcha powder (if using) for coating
  5. Remove the mixture from the refrigerator and roll into 1-inch balls using your hands
  6. Roll each ball in the pistachio, sunflower seed, and matcha coating mixture.
  7. Place the completed energy bites on a parchment-lined tray and refrigerate for at least 30 minutes to set
  8. Enjoy chilled for the best flavor and consistency

  • Ingredient Tip: For best texture, use natural peanut butter with no added sugar
  • Storage:
    • Store in an airtight container in the refrigerator for up to 7 days
    • Can be frozen for up to 2 months
