This pie is perfect for a romantic Valentine’s Day treat or a decadent dessert with the plus of some added protein. Ingredients

  • 1½ cups dark chocolate chips (about 10 oz.)
  • 1 package silken tofu
  • ½ tbsp. pure maple syrup
  • 1 tsp. vanilla extract
  • 1 cup fresh raspberries (or thawed from frozen)
  • 1 (9-inch) prepared graham cracker crust

Instructions

  1. Melt the Chocolate: In a microwave-safe bowl, heat the chocolate chips on medium for 1 minute. Stir, then continue microwaving in 20-second intervals until fully melted.
  2. Blend the Filling: In a food processor or blender, combine melted chocolate, tofu, maple syrup, and vanilla extract. Repeat until smooth and creamy. (Note: You may need to get in there with a spoon to mix things up.)
  3. Incorporate the Raspberries: Add your raspberries and pulse to distribute them throughout the mixture. Blend them according to your preference.
  4. Assemble: Scoop the filling into the prepared crust, smoothing the top. Optional: Arrange any extra raspberries decoratively on top, or top with chopped or shaved dark chocolate.
  5. Chill & Serve: Refrigerate until set (at least 2 hours). Serve chilled and enjoy!
