In a randomized controlled crossover trial, the study investigated the impact of replacing red and processed meats with mycoprotein-based foods, specifically QuornTM, on various health biomarkers. Mycoprotein is a naturally occurring, meat alternative protein source. The participants in the study were 20 men with an average age of 30 and an average BMI of 24. The results revealed that consuming mycoprotein led to a reduction in waist circumference, total cholesterol, and low-density lipoprotein cholesterol levels. Additionally, urinary levels of potassium and nitrate increased with mycoprotein consumption.
